Ingredients

Pumpkin and Rosemary Muffins!:

  • Vegetable oil or oil spray, for oiling
  • 180g (6 1/2oz) self raising flour
  • 130g (4 1/2 oz) wholemeal flour
  • 1 tsp baking powder
  • 1/2 tsp bicarbinate of soda
  • good pinch of salt
  • 3 sprigs of fresh rosemary, very finely chopped
  • 240g (8 1/2 oz) cooked pumpkin (about 1 small wedge), cut into 0.5cm (1/4 inch) dice. Ready-cubed, uncooked squash is available in supermarkets
  • 2 eggs, lightly beaten
  • 100ml (4 fl oz) plain yoghurt
  • 275ml (10 fl oz) milk
  • 3 big squidges of honey
  • 60ml (2 1/2 fl oz) vegetable oil
  • handful of pumpkin seeds
  • 12-hole muffin tin

(Serves 6-12)

!Macaroons!

  • 125g (4 1/2 oz) icing sugar
  • 125g (4 1/2 oz) ground almonds
  • 40g (1 1/2 oz) egg whites
  • 2 tbsp water
  • 110g (4 oz) caster sugar
  • 50g (2 oz) egg whites
  • food colouring of your choice (optional)
  • Desiccated Coconut, for sprinkling (optional)
  • 150ml (5 fl oz) double or whipped cream, whipped
  • Piping bag fitted with a 1 cm (1/2 inch) nozzle.

(Serves 3-6, depending on how hungry you are!!!)

!Waitrose, Heston’s Lemon Tart!

  • 375g frozen Cooks’ Ingredients All Butter Shortcrust Pastry, thawed, (2 x 250g in one pack)
  • 4 Waitrose Unwaxed Lemons (juice of 4, zest of 3)
  • 170g unsalted butter, cubed
  • 220g unrefined, golden caster sugar
  • 5 medium Waitrose Columbian Blacktail Free Range Eggs, plus one medium Waitrose Columbian Blacktail Free Range Egg Yolk, beaten
  • you will also need some baking beans.
  • Creme Fraiche (to serve) (optional)

(Serves 6-8)

!Waitrose’ Layered Summer Pudding with Blackberries & Strawberries!

  • 4 x 150g pack essential Waitrose Dessert Blackberries
  • 225g Strawberries, Sliced
  • 3 tbsp creme de cassis
  • 25g caster sugar
  • 1 tbsp chopped fresh mint
  • 7 slices (about 170g) medium, preferably stale, white bread, crusts removed
  • Clotted Cream (optional), to serve

(Serves 6)

!Waitrose’ Delia’s Strawberries and Vanilla Pavlova!

  • 3 large fresh Waitrose’ Columbian Blacktail Free Range Egg Whites
  • 175g Golden Caster Sugar
  • 400g fresh, ripe essential Waitrose British Strawberries, hulled
  • 1 dessertspoon golden caster sugar

For The Filling

  • 250g tub essential Waitrose mascarpone, chilled
  • 1 teaspoon Ndali Fairtrade Vanilla Extract Intense
  • 200g tub Waitrose French Natural Fromage Frais
  • 1 Rounded Dessertspoon Golden Caster Sugar
  • You will need icing sugar to dust
  • You will need an electric whisk, a skewer and a medium baking sheet lined with baking parchment.

!Cumin lamb kebabs with pea and leek mash!

  • 1 tsp cumin seeds
  • 1/4 tsp dried crushed chilli
  • 1 tbsp olive oil
  • 2 cloves garlic, chopped
  • 2 x 300g packs essential Waitrose’ lamb diced leg
  • 250g Waitrose Ready To Cook Shelled Garden Peas Or Frozen Peas
  • 15g Butter
  • 2 leeks, trimmed and shredded
  • 2 tbsp chopped fresh mint
  • 4 tbsp Total Fat Free Greek Strained Yoghurt
